Pastor is a third generation farmer. He a had humble beginning more than three decades ago, starting on a plot of land with 4000 Caturra trees. We are lucky to have snatched his very limited production of the rare Papayo varietal.
Pastor remembers those early days fondly: less diseases, higher prices, healthier soils...
Like many other farmers, it became harder and harder to make a living after the International Coffee Agreement ended. He is now a member of the Monkaaba group and was a founding member of the Los Naranjos Association in 2000, an organization that brought 90 smallholder producer together to receive more for their coffee.
Despite being a lifelong farmer, he only shipped his first micro lot in 2018. He now focuses on higher quality lots to get the international recognition he deserves.
THE MONKAABA PRODUCER GROUP Pastor is now a member of the Monkaaba group we often buy from.
It's a smallholder coffee grower empowerment initiative whose goal is to assist other growers in the area to not only find a better market for their coffee, one that pays a solid price, but also to invest in the knowledge and skill of producers in a way that ensures their future success while making them more autonomous.
We release many regular coffee from the group throughout the year and they are always delicious!

OUR IMPRESSIONS
This coffee transforms beautifully as it cools in your mug. Don't rush it! This rare variety opens up beautifully as it drops in temperature, so letting your cup cool down for a few minutes is the secret to unlocking its full mandarin sweetness and velvety texture.
It opens with a warm, comforting aroma of arequipe (rich & velvety Colombian confection made of slowly sweetened, caramelized milk). Your first sips deliver a thick, velvety mouthfeel with a deep, smooth sweetness.
As the cup cools, the profile shifts from rich and warm to crisp and vibrant. The initial sweetness opens up into a clean, gentle, and non-tangy fruitiness, featuring clear notes of sweet mandarin orange and tropical papaya.
By pulling back the extraction times slightly on both straight espresso and filter methods, you protect those delicate tropical notes. With its low-acid, rounded profile, it completely avoids any sharp tartness, making it an excellent choice for anyone who values a silky body and a clean, fruit-forward finish.
HOW PROCESSING IMPACTS FLAVOUR
This coffee’s transition - from a creamy body to vibrant fruitiness - comes from a precise, multi-stage washed processing method.
Right after harvest, the whole cherries rest in sealed bags for 8 hours. They are then placed in the de-pulper hopper for another 12 hours to ferment. This careful pre-fermentation step builds the complex, dairy-sweet arequipe notes and thick, velvety mouthfeel. Next, the cherries are released through the de-pulper and left to dry-ferment for 36 hours, which cleanly develops the vibrant mandarin and papaya notes.
After being washed three to five times, the coffee moves to raised drying beds for 18 days to a full month. Pastor actively manages sun exposure using a sliding roof to slow down the drying process on hot days. This slow, shaded drying phase stabilizes the bean, locking in its clean finish and low-acid structure.

♻ Designed as a collector's item or to be reused, your tin was made to stick aroundlong after the coffee is gone.
CARE INTRUCTIONS
♡ To keep it in good condition, store it in a cool, dry place away from direct sunlight and heat sources. When needed, wipe the inside and outside with a damp cloth rather than soaking it in water. We recommend avoiding full submersion and dishwasher use, as both can lead to rust over time.
Allow the tin to dry completely before reuse, paying special attention to the lid, rolled edges and sealing components where moisture can accumulate.
⚠ Do not remove, puncture or tamper with the one-way degassing valve located on the top of the tin. The valve helps release excess gas from freshly roasted coffee while limiting oxygen exposure.
○ Under the screw-top lid, you will find a silicone freshness seal. Please do not remove or modify it. Keep it clean and dry, and ensure it is properly seated after each use to help maintain freshness and prevent unwanted moisture from entering the tin.
⚠ For the best coffee quality, avoid storing the tin in the refrigerator or freezer. Temperature changes can create condensation inside the container, which may affect both the coffee and the tin over time.
